What We Sharpen
Most people in Portland do not think about their knives until one slips and nicks a finger. The dull blade is the one that gets you. We started Portland's Sharpest to fix that. We hand-sharpen knives in Portland, one blade at a time, and we test every edge before it goes back to you.

Your kitchen does the most damage to a blade. We handle kitchen knife sharpening for chef knives and paring knives, plus Japanese kitchen and chef knives that need a finer, thinner edge. Got a steak knife set that stopped cutting at the table? Our steak knife sharpening service brings it back. Most kitchen knives start at $8.

Knives leave the kitchen, too. We offer pocket knife sharpening for your everyday carry, hunting knife sharpening for fixed and folding blades before the season, and outdoor and bushcraft knife sharpening for customers who enjoy trips out to the Gorge and Mount Hood. Each blade gets the right angle for the way it is used.

Scissors go dull, too, and most people just toss them. You do not have to. We do basic scissor sharpening for household pairs, kitchen shear sharpening for the ones that cut herbs and poultry, fabric shear sharpening for the sewists and quilters around town, and grooming shear sharpening for groomers and barbers who need a clean cut all day.

Then there are the bigger tools. Oregon yards and woodpiles wear them down fast. We sharpen axes and hatchets so they bite the wood instead of bouncing off. We do machete sharpening for clearing blackberry vines and brush. And our lawn mower blade sharpening gives you a clean cut and a healthier lawn, which matters with how fast the grass grows here each spring.
Why by hand? Those pull-through gadgets and big grinding wheels tear off too much steel and leave a rough edge that dulls fast. Every pass shortens the life of your knife. We work slowly on professional equipment instead. The edge comes out smoother and sharper, and your knife lasts for years longer. For a blade you paid good money for, that care is worth it.
You will find our customers all over Portland. Home cooks in Sellwood and Beaumont, line cooks downtown, hunters loading up before a trip east, and gardeners out in St. Johns. Here is the simple test: if your knife slides off a tomato skin instead of biting in, it is time. Once or twice a year keeps most home knives sharp. Cook every night? Come by a few times a year, and you will feel the difference. We sharpen by hand, take off only the steel we need to, and get your blades cutting like new again. Drop them off or book a time online, and most jobs turn around fast.

Portland Food & Knife Culture
Portland loves food. People here cook a lot. They shop at farmers markets, grow food in their yards, and buy fresh fish and meat from local shops. From the Pearl District to Sellwood, Woodstock, Mt. Tabor, and Eastmoreland, good food starts with a sharp knife. We sharpen knives for cooks, chefs, and home kitchens all over Portland. A sharp knife makes cooking easier, faster, and a lot more fun.
Portland is full of cooks and gardeners. In Reed, Sellwood-Moreland, Woodstock, and Laurelhurst, people grow gardens and take care of their own tools. We sharpen more than kitchen knives. We also sharpen pruners, hedge shears, garden tools, axes, scissors, and more. Sharp tools make clean cuts. Clean cuts are better for your plants and safer for you. We help folks from Southeast Portland to Lake Oswego, Beaverton, Vancouver, and Clackamas County.
The Pacific Northwest loves good tools, and Portland has a strong knife culture. Chefs, makers, hunters, fishers, and woodworkers all care about their blades. In Division, Hawthorne, Mississippi, and St. Johns, people buy knives that last for years. We work on all kinds — from fine Japanese kitchen knives to work knives and pocket knives. A sharp edge helps a knife cut well, stay strong, and last a long time.
A sharp knife is a safe knife. A dull knife slips and takes more work. We are a small, local shop run by Oliver McWhorter. You can find us at 5334 SE 34th Ave in the Reed neighborhood of Southeast Portland, close to Sellwood, Eastmoreland, and Woodstock. When you come to us, you work with a real local sharpener — not a big mail-away service. We know the city, the food, and the love of good tools.
Fast work. Sharp blades. Drop off any day of the week.
