Sharp knives change everything about their use. Vegetables fall apart under the blade instead of being crushed. Meat slices cleanly. Prep gets faster, easier, and safer. The same is true beyond the kitchen — sharp pruners make cleaner cuts that heal better, sharp mower blades cut grass instead of tearing it, and sharp scissors stop chewing through fabric. A properly sharpened edge isn't a luxury; it's how every cutting tool is supposed to feel.
Most blades arrive dull. Factory edges are rarely as sharp as they can be, and even good knives lose their edge over months of normal use. Bringing them back doesn't take much — just someone who knows how to do it right.
Every blade gets treated as if it were my own. An exact angle, careful treatment, and correct geometry — all of it shapes the sharpening process.
The goal is always the same: putting a razor-sharp edge onto your tool while removing the minimum amount of material from the blade. Aggressive sharpening eats into a knife's life. A careful approach preserves the blade's profile, protects its longevity, and leaves the customer with a sharper edge than they started with — even if it's the tenth time it's been sharpened.
For damaged blades — chipped edges, broken tips, rust, neglected geometry — the same principles apply. Every blade that comes through my door gets restored to the edge it deserves. Never grind away more than the blade can afford to lose.
Portland's Sharpest is owned and operated by Oliver McWhorter out of a studio in the Reed neighborhood of Southeast Portland. The love for sharpening started with a set of whetstones inherited from a grandfather who kept them around but didn't really use them. Five years of self-taught practice followed — sharpening every knife in the house to a razor-sharp edge. Today, the work runs on professional, precision machinery, tailored to give you wicked sharp edges on every tool you own.
