Sometimes a knife is sharp but still does not cut well. It wedges in dense vegetables and feels like hard work. The problem is the blade is too thick behind the edge. Knife thinning in Portland fixes that. We remove steel from the blade road so the knife glides through food again instead of splitting it.
Years of sharpening slowly make a blade thicker right behind the edge. That thickness creates drag, so even a sharp knife struggles. Thinning takes that material off and restores the slim profile the knife had when it was new. It makes an old workhorse feel like a fresh blade. This is great for kitchen knives that get used hard. After thinning, we put a fresh edge on, the same as our kitchen knife sharpening.
Knife thinning is a flat $10, which includes the thinning work and a fresh sharpened edge. If you also want to change the angle or reshape the bevel, our custom knife grind covers that. Bring in the knife that feels like it should cut better, and we will sort it out.
